Colonial Mushroom Ketchup

Mushroom Ketchup is a light sauce something like a cross between Au Ju and Worcestershire. Its made with mushrooms, onions and seasonings that are found in the Kitchen Pepper seasoning blend. You can use it straight on cooked meats like AU Ju, or as an added liquid seasoning to soup bases, etc. It’s really a light, fat free, flavor filled sauce. As the story goes, the 1700’s term ‘ketchup’ referred to a thin meat sauce that originated in China. Our modern idea of ketchup made with a thick tomato base didn’t appear as a condiment until the late 1800’s. In fact, did you know it was originally touted as a medicinal remedy around 1830’s?
